My go to (vegan) dinner | Stir fry

hi loves! So since I’ve been mostly eating a plant based diet the biggest question is what I eat since there is a lot that I don’t eat. I thought I’d share with you what my absolute favorite go-to vegan meal is. It’s so easy, it’s cheap and it’s delicious-what more could you want from a dinner?! Lets get into it.


Organic White Rice or Uncle Ben’s because it’s just so easy

Organic Broccoli

Snap Peas

1/2 onion



Earth Balance Butter

I didn’t want to put exact amounts because you honestly cannot go wrong and it all depends on what you want in your stir fry. I love garlic so I probably put way more than the average person and I also love rice so I’ll put an embarrassing amount in my bowl as well.


Super easy.  Set up your pan with some vegan butter and let that melt. Add your onions and spinach first so the onions can brown and the spinach can start to welt a bit. Then add the rest of your veggies and sauté everything. I always like to add garlic salt at the end to add a little more flavor. If you do use uncle bens you can go ahead and microwave that sucker for 90 seconds. Just throw that down in a bowl and pour the veggies on top and viola! you’ve got yourself a vegan, delicious meal.

I make this dinner at least once a week and I don’t think I can ever get sick of it. It literally takes 10 minutes to make and makes me feel good because it’s not a super unhealthy meal so I actually feel good about it.
